I thought I'd share a quick lunch idea with you that Charley and I really liked. If you have a preschooler you know it's an accomplishment to find something you will both eat.
Here's what you need:
* pasta (I used elbows)
* one can of tuna in olive oil
* broccoli
* grape tomatoes
* capers (rinsed)
* toasted pine nuts
* minced red onion
* lemon (you could add zest and juice...I just used juice)
* salt and pepper
Here's what you do:
Cook the pasta. While it's cooking, drain and flake the tuna, but save the oil. Combine the tomatoes, capers, and pine nuts. When the pasta is about half cooked (when there are a few minutes left) add the broccoli to the boiling water. Combine the olive oil with the lemon juice and minced onion and add some pepper. You can add more extra virgin olive oil if you think you need more dressing; just be sure to adjust how much lemon juice you add so it's balanced. (Don't add the salt until you've combined everything, because capers are really salty.) When the pasta is al dente and the broccoli is crisp/tender (or as cooked as your kiddo needs it to be safe) drain them. Add everything together and voila! Lunch!
Are you looking at this photo thinking, "She made this in December! Why is she posting it now?" Oh no, we made it last week. Those pajamas are so adorable they were hard to put away. You might also be thinking, "Why is he in his pjs at lunch?" I have no reply.
